While I was in NZ my sister made me this salad. I swear, she is some kind of culinary genius because its just gorgeous! And all the flavours go so well together.
10 Cherry tomatoes, halved
100g Feta, crumbled
1/4 cup Walnuts, chopped roughly
2 cups Spinach, finely sliced
1/4 cup Cranberries
1/4 cup chopped fresh mint
1/4 cup chopped fresh coriander
1 cup Wholemeal cous cous
1/4 Basil pesto
1/2 cup olive oil
Place cous cous in a bowl and cover with 1 cup boiling water, and cover with a plate. leave to stand while you chop the other ingredients. Combine in a large bowl: cherry tomatoes, feta, walnuts, spinach, cranberries, and herbs. Take a fork and lightly ‘fluff’ up the cous cous from the bowl. Add cous cous to bowl with other ingredients. In a small bowl combine pesto and olive oil and stir until combined. Pour pesto and olive oil over cous cous salad, and mix well until combined. Leave to sit for 30 minutes prior to serving to let the pesto soak into the cous cous.
